The Role of Emulsifiers in Water-in-Oil Emulsions: A Review of Mechanism and Application

Emulsions, a mixture of two or more liquids that do not normally mix, have been used in various industries such as food, pharmaceuticals, and cosmetics. One type of emulsion is the water-in-oil (W/O) emulsion, where water droplets are dispersed in an oil phase. The stability and properties of W/O emulsions rely heavily on the presence of emulsifiers.

An emulsifier is a molecule that has both hydrophilic (water-loving) and hydrophobic (water-hating) ends. These molecules work by attracting the oil droplets to their hydrophobic end, while repelling them from their hydrophilic end. This creates a stable interface between the water and oil phases, preventing the mixture from separating.

Studies have shown that increasing pH and stirring speed can increase the emulsification rate, while temperature has a positive effect on emulsification. Moreover, the results indicate that acidic and amphoteric fractions exhibit higher interfacial activity, larger emulsification rate constant, and faster emulsification rates.

The effects of functional group composition, emulsifier concentration, temperature, pH, and stirring speed on the emulsification rate of heavy oil were investigated in a recent study. The results suggest that the emulsification rate increases with increasing emulsifier concentration, reaching a maximum value at a concentration of 0.05 mol/L before decreasing.
